Healthy and Quick Salmon Salad

Ingredients
Serves- 2
Salad Ingredients
- 1 bag Green Mix or Salad of your choice
- ½ English Cucumber diced
- 1 Avocado Diced
- 5-10 red radish thinly sliced
- Red Onion thinly sliced
- Sunflower nuts for garnish
- Croutons of your choice (Optional)
Salmon Prep
- Salmon (1 Salmon steak per person)
- Garlic powder
- Salt
- Pepper
- Olive Oil
Salad Dressing
- 3 TBSP Lemon Juice
- 3 TBSP Olive Oil
- Fresh Dill chopped
Prep-
- Sprinkle Sale, black pepper and garlic powder on salmon and Cook Salmon as per your choice. You can broil in oven or cook it in pan with some olive oil.
- Mix all ingredients of salad dressing
Prep Ahead Tip-
- You can make this salad dressing in a glass jar in fridge for up to a week.
- Chop and mix all salad greens, cucumber, Avocado, radish and Avocado.
Prep Ahead Tip –
- You can chop cucumber and radish ahead of time. Buy store bought salad greens to save time.
- Assemble the cooked salmon on top of the salad bed, pour all the dressing. Season with nuts or croutons or both and Enjoy!
