Ingredients
For 4 servings:
12 oz pasta (penne, rotini, or spaghetti)
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
2 cloves garlic, minced
3/4 cup pesto (store-bought or homemade)
1½ cup heavy cream (or milk for lighter version)
2 TBSP grated Parmesan cheese
Salt and black pepper, to taste
Fresh basil leaves (optional, for garnish)
Cherry tomatoes (optional, halved for freshness)

Notes
You can prepare chicken ahead of time and store in fridge/freezer and save on cooking time.
Use fresh Parmesan for best flavor and smooth texture.
Use store bought fresh Pesto for fresher taste.
Instructions
Cook the pasta – Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Cook the chicken – While the pasta cooks, heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook for 6–8 minutes until golden brown and cooked through. Remove from skillet and set aside.
Make the sauce – In the same skillet, add garlic and chopped shallot and sauté for 1 minute. Stir in pesto and cream, then sprinkle in Parmesan. Let it simmer gently for 2–3 minutes until slightly thickened.
Combine everything – Add cooked pasta and chicken back to the skillet. Toss until everything is coated in the sauce. If it feels too thick, stir in a splash of reserved pasta water.
Serve – Garnish with fresh basil and cherry tomatoes if using. Serve warm with extra Parmesan on top.
