Ingredients

For 4 servings:

  • 12 oz pasta (penne, rotini, or spaghetti)

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 3/4 cup pesto (store-bought or homemade)

  • 1½ cup heavy cream (or milk for lighter version)

  • 2 TBSP grated Parmesan cheese

  • Salt and black pepper, to taste

  • Fresh basil leaves (optional, for garnish)

  • Cherry tomatoes (optional, halved for freshness)

  • 1/2 cup reserved liquid from boiled pasta

Notes

  • You can prepare chicken ahead of time and store in fridge/freezer and save on cooking time.

Instructions

  • Cook the pasta – Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

  • Cook the chicken – While the pasta cooks, heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook for 6–8 minutes until golden brown and cooked through. Remove from skillet and set aside.

  • Make the sauce – In the same skillet, add garlic and chopped shallot and sauté for 1 minute. Stir in pesto and cream, then sprinkle in Parmesan. Let it simmer gently for 2–3 minutes until slightly thickened.

  • Combine everything – Add cooked pasta and chicken back to the skillet. Toss until everything is coated in the sauce. If it feels too thick, stir in a splash of reserved pasta water.

  • Serve – Garnish with fresh basil and cherry tomatoes if using. Serve warm with extra Parmesan on top.
